Hummus is absolutely delicious. One of those really simple and tasty dishes you can whisk up at anytime for anyone...Our favourite is to pair it with some tasty seasonal vegetables sticks to really tease those taste buds...

Broad Bean & Pistachio Hummus…

Hummus is a real favourite. Beautiful as a simple snack, delicious served with salad, our favourite pairing is crispy seasonal vegetables. Particularly love spring time in the kitchen where small fresh asparagus tips are readily available and just seem to pair so well with this tasty dip...Sometimes we even scatter with fresh parmesan...Of course D.O.P. Amazing as a simple accompaniment to buffalo mozzarella, delicious served in fresh pasta, as a filling for a baked potato even with chunks of crusty bread. Whilst the traditional chickpea based hummus is delicious and taken from the words of Jane Clarke at Nourish she likes this recipe in particular the lighter feeling of the broad beans and the pistachio provide a great source of protein. Give it a go I know you won't be disappointed...

Cool I replied, let's get you both in the zone and make some fresh dough......What will you top and stuff your pizza dough with?......Watch out for the next session, as they make calzone stuffed crusts.........

Wild On A Plate……

A few minutes later and another shout went up – someone had found some tiny purple mushrooms – surely they weren’t edible? Oh yes they are! and quite delicious lightly sautéed in a little butter, John guaranteed. At first it was like finding a needle in a haystack, but once you got your eye in, there were hundreds of these tiny little delicacies! Commonly known as the Amethyst deceiver (Laccaria amethystina), the deception presumably because its colour fades and it can be confused with something more dubious. We also found a brown roll rim (Paxillus involutus) which was the most deadly toadstool find of the day. Apparently it doesn’t kill you first time you eat it, but the deadly toxins build up in your system until eventually you eat what you don’t know is going to be your last meal……………rather sinister, a bit like playing Russian roulette!

Once the apples are coated in the sticky toffee plunge or scatter with your favourite toppings, today we used crushed pecans, poppy seeds and colourful edible sprinkles, We made a special one for the birthday girl covered in edible glitter! delightful!

A Cauldron of “Kinda Chilli Con Carne” & Epic Spiced Cornbread with Chilli Butter.

Bonfires burning, a woody, damp, earthy scent drifting through the night air..... this is the dish, the one to accompany the epic bonfire party long into the night. A cauldron of chilli beans, beef, pork, spice and loveliness with chunks of fresh baked cheesy cornbread and a chilli butter. Stay safe and enjoy.

The semi- final of the Great British Bake Off with a 20 layer cake, A 20 LAYER CAKE!! This is a lovely and delicate cake. Make sure you have some time on your hands as this is very time consuming to make. The wafer thin layers make this a very tricky cake. The chocolate makes a beautiful, glossy finish.
