Baked Honey & Thyme Pear with Vanilla Rice……

Roasted sticky pears infused with beautiful fresh thyme, served on a bed of the most delightful, creamy, moreish vanilla rice. Serve on a large warm platter and watch as it is devoured with licking lips......

4 Medium Pears

1 Handful Fresh thyme

1 Heaped tbsp Clear honey

100 ml Freshly squeezed juice

200 Grams Pudding rice

1 Litre Semi skimmed organic milk

200 ml Single cream

2 Medium Vanilla pods

4 tbsp Golden caster sugar


This is so simple to prepare, cook and enjoy.  The dish will be devoured in front of your very eyes.

Pre heat oven to 180c

In a small deep baking tray add the peeled pears, leaving the stalk showing and slice across the bottom,  so the pears can stand upright.  Glaze with honey and scatter with fresh thyme, pour in the juice and bake for 20-30 mins until soft, spooning the juice over them a few times during the cooking time. Whilst the pears are baking in a large heavy bottom pan add the rice, the vanilla pods (split lengthways), scrap out the seeds and pop in the whole lot including the empty pod too.  Add the milk and sugar and gently bring to a simmer then turn down the heat and let it gently cook away, stirring quite often for 20-30 mins. Once the pears are cooked and the rice is soft and creamy add the cream, remove the pods and serve the rice straight onto a warmed platter laying the pears over and drizzling with the sticky juice. Epic and totally delicious !!!
