Could you, would you, would you mind, would you have time? I've tuned in, she said and what I really want is a recipe from a cookbook called "Better Than Sex" by Margi Clarke, that's the birthday cake I want!!! SPICED PUMPKIN BASTELLA!!!
HUMMM... I felt into this spritely girl's "want". Who am I to resist making this delight for her.
PUMPKIN?????.............Where am I going to get a pumpkin? it's early June!!! Halloween is a bus ride away and so is pumpkin.... I know butternut squashes, various types, flavours and sizes, bit early for the UK but they travel well -YES SQUASHES IT IS!
So I set to it. I'll make a giant one, a big cake, she can have candles on top!!!
What is a bastella anyway? What's it got to do with sex? I thought... So here goes!

  • Prep: 30 mins
  • Cook: 45 mins
  • Yields: Party size

2 Sheets of puff pastry

2 tbsp Oil

4 Onions

1/2 tsp Fresh black pepper

1 tsp Ground cinnamon

675 Grams Squash

4 tbsp Cranberry sauce or jelly

1 Egg

Birthday candles

Preheat the oven to 200 degrees.

In a large roasting tray, throw in the chopped squash and onion. Mix in the cumin, oil and massage - (THE SEXY BIT!!) Coat the veggie mixture season with black pepper and bake for 30 minutes or until it is all soft and caramelised at the edges. Then add the cranberry sauce and give it a little mashing!

Place your first sheet of puff on a baking tray lined with parchment, heap the mixture onto it, leaving a clean lip around the sides, dampen slightly and place the second sheet on top (I GET IT NOW!) Firm together to make a nice seal, slash a couple of vents in the top and paint with egg wash. Pop back into the oven and bake until golden and crispy for approximately 30 minutes.

Now to find my broomstick and transport the creation to the birthday celebration!

GUESS WHAT?- she loved it! and happy birthday!
