Breaded Chicken Strippers & Halloumi Salad… By Lucy Simmons

Super quick, super easy to prepare and share, crispy breaded strips of chicken, grilled halloumi cheese on a bed of mustard dressed salad....... Perfect for a sharing lunch or a lazy summer evening.

  • Yields: 4 Medium


4 Medium Chicken fillets

2 Handful Lambs lettuce

4 Medium Tomatoes

1 Medium Iceberg lettuce

195 Grams Sweetcorn, drained

2 tbsp Olive oil

1 tbsp White wine vinegar

1 1/2 tsp English mustard

1 Handful Halloumi


1.  Coat the chicken in seasoned flour, dip in the whisked egg and coat in dry breadcrumbs. Preheat the oven to 180C, place the chicken onto a lightly oiled baking tray.  Bake for 30 minutes or until cooked through, tender and juicy.

2.  While the chicken is cooking,  prepare the salad.  Wash the leaves and halve the tomatoes, giving them a gentle squeeze .  In a large salad bowl mix together the lambs lettuce, iceberg lettuce, sweetcorn and tomatoes.  Whisk  together the mustard, olive oil and white wine vinegar and drizzle over the salad.

3.  Place the halloumi under a preheated grill a cook each side for 5 minutes.

4.  Slice the chicken and rip the halloumi, scattering onto the crispy salad, give it a toss and serve with extra dressing.  Enjoy.
