Brussels With Roasted Chestnuts…On A Open Fire, Jack Frost Nipping At Your Toes.

Love the song, chestnuts roasting on an open fire.....Jack Frost nipping at your toes.....Yule tide carols being sung by a choir and folks dressed up like Eskimos, add a few freshly harvested brussels and you have a simply perfect dish to adorn your festive table.

3 Large Brussel sprouts stalks, brimming with sprouts

2-3 Handful Chestnuts

1 tbsp Butter

1 Scattering Sea salt & freshly milled black pepper

1-2 Medium Star anise

2 Handful Pancetta chunks

1 Handful Parsley leaves or herbs of your choice


Roast the slashed chestnuts in a hot oven, watch out as they like to explode, peel and set aside. See our recipe for chestnuts..... Prepare the brussels, add to a steamer over boiling water infused with the a few star anise and cook until tender yet firm.  Add the peeled chestnuts and brussels to a large frying pan with a generous knob of butter 1/2 ladle of the star anise infused water, fry gently, season and adjust to your taste buds, add a scattering of fresh finely chopped parsley........that's it simple and delicious.

Serve straight to the table in a warmed serving dish.

For more explosions of flavour try adding crispy fried bites of pancetta to the dish.
