Bursting with flavour and simple and delicious dessert.........

  • Yields: 10 Small


75 Grams Unsalted butter

50 Grams Light soft brown sugar

50 Grams Golden caster sugar

50 Grams Golden syrup

125 ml Double cream

150 Grams Self-raising flour

1 tsp Baking powder

175 Grams Softened butter

175 Grams Caster sugar

2 tbsp Ground almonds

4 Medium Eggs

2 tsp Vanilla Extract

3 Large Eating apples, sliced


  1.  In a medium sauce pan melt the butter, sugars and syrup together, swirl occasionally to make sure everything is combined and let it simmer for 3 minutes until a lovely golden colour.  Off the heat, pour in the cream and swirl again until combined, pour into a jug and leave to cool.
  2. Beat together all the sponge ingredients in a large bowl until pale and fluffy.
  3. Slice the apples and place in the base of the baking tray,  pour the caramel over the apples.  Spread the sponge mixture over the apples in a smooth even layer and bake for 30-35 minutes in a preheated oven at 180c until golden and well risen.  Place a skewer in to test if cooked.
  4. Serve with some cream or custard.  Enjoy.
