

Chicken In A Kicking BBQ Sauce… The Slow Cooker Way……….Any Left Makes for A Great Lunchbox Treat

Flying the nest...... Succulent chicken in a kicking BBQ sauce, perfect with steamed rice, maybe fluffy mash, a pile of sweet potato wedges or how about the meat picked from the bones and all wrapped up in a warm flatbread, and don't forget..... a spanking fresh green salad. So get your mates round and share away, epic with a ice cold beer. Any leftovers are perfect for a lunchtime on the go snack.

Directions
Turn on the slow cooker, set on high for 6 hours. In the largest pan you've got add a dash of olive oil and a knob of butter, over a moderate heat fry the seasoned chicken quarters to brown the skin, about 10 mins and place in the crockpot. In the same pan, fry the onions for 2 mins, add everything else and a dash or two of water, turn up the heat and bring the sauce and onions to a gentle boil. Remove from heat and pour over the browned chicken, coating each piece, place the lid on the slow cooker and let the magic happen. Ready in 5 1/2 - 6 hours. Baste occasionally.
Get your mates round, you never know it could just inspire them to invite you over to their pad one day for a slap up feast...Serve straight to your table on a board with a couple of forks to rip the juicy chicken from its bones. Today we filled warmed flatbreads with crunchy salad and leaves, stacked it with chicken and the sticky bbq sauce, wrapped it up and devoured. Oh and if there is any left it makes for a great lunchbox treat the next day...... Happy days.
