Irresistible...... A beautiful chocolate cake for a party celebration, filled with fresh cream and sticky caramel sauce, topped with toffee popcorn. Its incredibly mouth watering and everyone will be going back for more! I made this for my Mums birthday and everyone enjoyed it. One of my favourite cakes I have ever made!! Enjoy baking it!

175 Grams Quality plain chocolate

200 Grams Butter

200 Grams Self-rasing flour

300 Grams Light brown soft sugar

25 Grams Cocoa powder

1 tsp Baking powder

4 Medium Eggs

300 ml Double cream

4 tbsp Caramel condensed milk

100 Grams Chocolate toffee popcorn


For the cake.

To start off grease and line 2 x  8inch  round cake tins.  Pre heat the oven to gas mark 4/ 180oc so your oven is nice a hot for your cake.

In a small pan put in 100ml of hot water, melt your chocolate and butter gently in a separate bowl over the hot water and heat gently until all the mixture is silky smooth.  Then remove for the heat. In a large bowl place the flour, sugar, cocoa powder and baking powder. Gradually beat in the eggs. Then when your chocolate mixture has cooled down pour into the floury batter,  beat until smooth. Divide the mixture into your cake tins and bake for 30 minutes, checking that the cakes are cooked using a skewer.  When you take it out the oven allow time for the cake to cool (10minutes) and then turn out onto a wire rack.

For the filling/topping.

You need to whip the cream until it reaches the stage of medium peaks and spread onto 1 layer of the cake.  Spoon the caramel onto the other side of the cake a spread.  Your next step is to place them on top of each other, squeezing the cakes together gently.  Now for the fun part add a layer of the softly whipped cream on top of the cake and  sprinkle the toffee popcorn.

Ready to eat!
