Best mates, rich chocolate and ginger in a beautiful brownie........

  • Yields: 20 Snack size


150 Grams Dark chocolate 70%

250 Grams Butter

200 Grams Soft brown sugar

150 Grams Self raising flour

50 Grams Cocoa powder

3 Medium Eggs

125 Grams Crystallised ginger, chopped


1.  Preheat the oven to 180C/ gas mark 5. Grease and line with baking parchment a 20cm x 20cm tray.

2.  Melt together the chocolate and butter either in the microwave or over a pan of gently simmering water.  Set aside to cool slightly.

3.  In a large bowl add the chocolate mixture to the flour, sugar and cocoa, mix well.  Mix in the eggs and stir in the chopped crystals of ginger.  Transfer the brownie mixture to the tray and place in the oven for 35-40 minutes.  It is cooked when you poke it with a sharp knife and it comes out clean. Though cook it for a few minutes less if you like a squidgy brownie.

4.  Transfer from the tray to a cooling rack and when it has cooled cut it into squares dusting with icing sugar.


For an extra kick of flavour try adding a few finely chopped roasted chillies.
