Chocolate & Sweet Potato Loaf Cake…

This has got to be up there as the moistest, flavoursome chocolate rich indulgent cakes we have ever baked. Every now and then a nugget of milky chocolate surprises, topped with a soft chocolate fudge, be brave give it a go.......

300 Grams Sweet potato, peeled and cut into chunks

250 Grams Good quality plain chocolate

175 Grams Butter

175 Grams Light muscovado sugar

3 Medium Free-range eggs

200 Grams Self raising flour

3/4 tsp Baking powder

150 Grams Milk chocolate

3 tbsp Golden syrup


1.  Place the peeled and diced sweet potato in a steamer over a pan of boiling water and cook for 12-15 minutes until firm, yet tender.  Place in a bowl and give them a gentle mash up adding 150g of rich dark chocolate and stir until all the chocolate has melted.

2.  Preheat the oven to 160C/ gas mark 3.  Grease and line the base and side of 26cm X 12cm loaf tin.  Whisk the eggs, sugar, butter, baking powder and flour together until smooth.  Stir in the sweet potato mixture, smash 100g of the milk chocolate and add to the mix.  Pour into a tin a level out.  Bake in the oven for 60 minutes, insert a skewer and if it comes out clean remove from the oven, if the skewer is not clean then cook for a further 10-15 minutes or until the skewer comes out clean.  Transfer onto a cooling rack.

3.  Melt the remaining plain chocolate adding 3 tbsp of golden syrup.  Spread over the cooled loaf cake and scatter the remaining chunks of milk chocolate.  Enjoy.
