Crispy Popcorn Spiced Chicken and Veggie Slaw………

Forget the takeaway.......The most simple, easy, crispy spiced, sharing popcorn chicken! Super healthy and full of goodness!......Today served with a crisp vegetable slaw........

Ingredients

For the Chicken Popcorns

8 tbsp Seasoned Breadcrumbs

4 tbsp Tomato Puree

1-2 tsp Cayenne Pepper

2 tsp Garlic Salt

1 Large Handfull of Parsley

2 Egg, seperated and whites whisked to soft peaks

2 Skinless Chicken Breasts

For the Veggie Slaw

1 Carrot, peeled, trimmed and thinley sliced

100 g White Cabbage, shredded

3 Spring Onions , trimmed & fineley sliced

1 Apple, peeled cored & chopped into matchsticks

2 tsp Apple cider Vinegar

1 Handfull parsley leaves

Season with sea salt & freshley milled black pepper

Directions

Super simple. Get your blender or blitzer. Add your chicken, tomato puree, cayenne pepper, garlic salt & parsley to the bowl and blitz it all together. Roll into bite-sized balls, dip in your egg white, then coat in your seasoned breadcrumbs.

In a pre-heated oven 220c/ Fan 200 cook your popcorn chicken bites on a tray for 15-20 minutes until golden brown.

If you have a food processor use it now, if not get your knife and grater at the ready. All your slaw ingredients need to be finely sliced and combined together with the Apple Cider vinegar to make your yummy veggie slaw. Save a little parsley for garnish and season.

Serve your popcorn crispy chicken with your veggie slaw together and garnish with a scattering of parsley!
