A quick and easy brunch made by you for your Dad to enjoy. A lovely omelette for a great Dad!

1 Medium Portabello Mushroom

1 Handful Ham

50 Grams Strong cheddar cheese

3 Medium Eggs

Pinch Salt

Pinch Ground Pepper

Heaped tbsp Butter


My Dad was going out the other day to watch his beloved local football team, he had missed breakfast, and was feeling hungry, so i offered to make him a little brunch, its like the time between  breakfast and lunch, so I made him an omelette brunch!!

To start off peel and slice the mushrooms and put them in a small saucepan with 25g of butter and cook on a medium to low heat for a few minutes, until cooked.  The next step is to prepare the other toppings, grate the cheese and shred the ham into small pieces.

Now break 3 eggs into a bowl and season with some salt and pepper, give it a quick whisk with a fork.  Get a frying pan ready so you can start building up your omelette and also at this point turn on your grill to a high heat so it's good and hot to finish off the omelette later.  Pour the egg mixture into the pan, let the underneath cook for a few minutes then add the cooked mushrooms, ham and cheese on top of the omelette and place the omelette under the grill until the cheese has melted and the omelette is golden. Fold the omelette into 1/2 moon shape and serve it for him with a  little red pepper salad and some slices of his farvorite bread.

Now serve your delicious omelette to your Dad.
