Epic Bonfire Night Chilli Dogs…..1 Foot Long

Big appetite, this is the dog for you. Dream...... a crusty fresh baked baguette, filled with caramelised onions, a foot long pork or beef sausage, lashings of fire cooked beef chilli adorned with a handful of roasted red and yellow chillies. This is the one, the gut buster of a feast. Perfect for party times, celebrations, feasts and cold winter evenings, served with ice cold buckets of beer....... One is probably enough !!!!!!!

10 Medium Freshly baked baguettes

10 Medium Beef or pork sausages, try a mixture of both

1 Handful Fresh red and yellow chillies

3 Medium Onions

2 Medium Onions

2 Cloves Plump garlic

2 Kg Beef

2 tsp Smoked paprika

2 tsp Coriander seeds

2 tsp Chilli flakes

400 Grams Red kidney beans

2 Medium Red peppers

250 Grams Pepperdew peppers


Pre-order enough fresh baked 12 inch baguettes for your guests and have a word with your butcher to make the beef or pork sausages ready and remember they must be 1 foot long.   Start by preparing your chilli beef and accompaniments.

Adjust quantities as needed, this is a recipe for 10.  In a large flameproof casserole add a dash of oil and gently fry the finely chopped onion until translucent and soft.  Bash up the spices with garlic and a little oil, add to the onions and gently combine for a minute.  Remove from the pan, add another dash of oil and the meat and fry over a medium heat for around 10 minutes, breaking it up as you go until all the juices have gone, you are looking for a crumbly dark brown meaty rubble.  Add in the coated onions, chopped red peppers, all the pepperdews and the kidney beans, enough water to just cover the meat, turn the heat down low, place a lid on and let it slowly blip away for a few hours, stirring now and then.

Roughly slice 3 large onions, drizzle with oil season with black pepper and wrap in foil ready to caramelise on the fire/bbq.

Place handfuls of whole red and yellow chillies, tossed in oil in foil, wrap until needed.

Fill buckets with ice and bottles of beer.

Light your fire or bbq, ready for your guests arrival.  Slice the baguettes lengthways and place them individually in a foil cradle, near the fire to keep warm.  Place your cooked beef chilli over the heat to gently stay warm.  On with the sausages and the sliced onions and chillies in a roasting dish.  The onions and sausages will take around 20 minutes turning regularly until golden brown and the sausages are cooked through.

The rest is simple, warm bread, scattering of caramelised onion, a foot long sausage, heap of beef chilli and a few roasted chillies on top, epic fun and for the love birds, share one together until you meet in the middle for a lip smacking kiss......perfect.
