

Festive Red Cabbage…..Perfect For Your Christmas Day Feast.

Slowly cooked, red cabbage, sweet red apple, red onion, fresh pomegranate juice, a hint of Christmas spice, rich ruby port. "A voila"..... A festive dish just perfect to adorn your table for your Christmas day feast.

Directions
Heat a dash of oil in a large flameproof casserole dish with a lid. Add the thinly sliced red onion, season with salt and fry for about 5 minutes, just to soften. Add the unpeeled apple chunks, discarding the cores, ruby port, brown sugar and continue to cook for a further 5 minutes. Add the shredded red cabbage, red wine vinegar and stir gently to combine. Add the allspice, cardamon, redcurrant jelly and pomegranate juice and combine well. Let it all come to a rolling boil, turn down the heat to the lowest flame, cover with a lid and gently simmer for 2-3 hours, stirring every now and then. Season just before serving.
The festive red cabbage can be made well in advance of the big day and will store in a non metallic container in your fridge for 2 to 3 days ready to be re-heated. This is a great way of developing deep rich flavours of this epic accompaniment to your Christmas day feast. Can also be frozen for up to 3 months,
