Goan Spiced Red Prawn Curry…..

GOAN PRAWN CURRY......Typically packed with seafood of fish, Goan curry is spicer than the curries popular in the north of India. Rich and packed full of flavour, the sweetness of delicious seasonal squashes & mango, the beautiful sour tartness of tamarind, fiery heat from the spices and the absolute stars.. Red or Tiger prawns, deliciously marinated in vibrant turmeric, complimented with the creamy coconut... This is a beaut of a dish, simple, healthy and one to bring a smile to your heart... Enjoy.

  • Yields: 4 Generous

Ingredients

300 g Red Or Tiger Prawns, uncooked, ask your fishmonger to devein, peel leaving the tail on....

2 tsp Ground Turmeric

1 Large Butternut Squash, Peeled, seeds removed & cubed

2 Large Mango's, Peeled, stoned & cubed

3 Shallots, Peeled & sliced

Scattering of Freshly Milled Black Pepper

1 tsp Dried flaked chillies, Corriander seeds, slightly bashed, Ground Cumin.

4 Cloves Garlic, peeled & smashed

1 Hunk of Ginger, peeled and finely grated

4 tsp Tamarind paste

2 tbsp Coconut oil for roasting & frying

400 ml Coconut Milk, Organic

Fresh Corriander to Serve

Fresh coconut flesh, garted to serve...Optional

Directions

Wash prawns, dry slightly and scatter over the ground turmeric, toss giving each beautiful prawn a golden coating...

In a hot oven, roast the squash, shallot, garlic, ginger & mango in coconut oil, season with black pepper, until squash is tender about 30 minutes.

Fry the turmeric coated prawns in coconut oil along with all the remaining spices until the prawns are just cooked, place to one side

Place the roasted veg in a large skillet, add the tamarind paste, cooked prawns and all the lovely spiced juices, coconut milk, stirring & heating gently ready to serve.

Scatter with ripped coriander leaves, and for a delicious crunch, freshly grated coconut flesh...... Today served with a delightful steamed basmati rice...... Enjoy
