Halloumi & Roast Veg Salad

Halloumi is a firm favourite in our house and this dish is such a tasty way to serve it! Roasted veg, yummy quinoa and crispy spiced halloumi....yum!!!

Ingredients

1 Courgette

1 Lemon

130 g Quinoa

1 Red Onion

225 g Halloumi

10 g Fresh Mint

1 tbsp Ras El Hanout Spice

1 Red Pepper

Directions

Pre heat oven to 190c/170 fan

Chop into nice chunks your Red Onion, Pepper and Courgette and place on a baking tray. Drizzle some olive oil onto the veg and season with some salt. Leave to roast in the oven for 35 mins until golden and slightly soft.

Place your Quinoa in a pan with 250ml of boiling water and leave to cook on the hob with the lid on for 20 mins until the Quinoa is tender.

Whilst your veg is roasting and Quinoa is cooking use half your lemon and squeeze the juice into a bowl. Add 2 tbsp of Olive oil and mix well. Set aside for later. Save the other half of your lemon for your garnish.

Chop up your mint leaves, disgarding the stalks. Set aside for later.

Slice your halloumi into sticks, or chunks, whatever you prefer and place into a bowl with your Ras El Hanout spice. Give them a good turn around until fully coated then transfer into a hot pan with a little oil to crisp up on each side for 2 ish minutes.

Take your cooked veg, and mix into your quinoa. Add half of your chopped mint and your lemon and oil mix you made earlier.

Serve this onto a plate adding your crispy halloumi on top, some of the mint leaves and a wedge of the left over lemon. And your done! Delicious veggie delight!
