

Honeycomb….Spice It Up

Delicious honeycomb, know in the west country as Hokey Pokey, glistening shards of maple, spiced or flavoured golden airy nuggets of indulgence, a real treat and excellent finish to many desserts. It's fun and we love it when the honeycomb explodes, like an erupting volcano. Enjoy.

Directions
Method.
Put the sugar and syrup into a saucepan and stir together to mix. (Don't stir once the pan's on the heat, though).
Place the pan on the heat and let the mixture first melt. It will turn gooey and then turn to a bubbling mass the colour of maple syrup - this will take 3 minutes or so.
Off the heat, whisk in the bicarbonate of soda and watch the syrup turn into a whooshing cloud of aerated pale gold.
Turn this immediately onto a piece of reusable baking parchment or greased foil.
Leave until set and then bash it, so that it splinters into many glinting shards.
For extra fun add a scattering of cardomon seeds to the syrup sugar mixture. Really the choices of spice or zests and flavours are endless, give it a go it's total fun and the kids love it...... be warned their dentist may not!
