Iced spice cookies & Teddy bear biscuits by Phoebe aged six…..

Wow just found these old recipes from Phoebe, great memories and yes she is still using this recipe today. Teddy bear biscuits using currants for there eyes, iced spice cookies. Heart opening will treasure these lovely jewels....

  • Yields: 20 Snack size


125 Grams Self raising flour

50 Grams Caster sugar

100 Grams Margarine

1 Medium Egg

Handful Currants for the eyes

175 Grams Plain flour

1 tsp Cinnamon

50 Grams Caster sugar

100 Grams Margarine Hard

1 Medium Egg

6 tsp Warm water

200 Grams Icing sugar


Its the same method for both recipes.  Preheat your oven to 180c, sift the flour, spice, sugar together, rub in the margarine to a crumb mix and add the wet ingredients to form a smooth dough. Rest in the fridge for 30 mins.  On a well flour worktop roll out your dough and cut into the desired shapes, place on a baking sheet covered in baking parchment.  For the teddy bears add currants for the eyes, brush with milk  and bake for 12-15 mins until golden and cool on a rack.  Ice the spiced biscuits with water and icing sugar mixed together and dust  the teddy cookies with icing sugar.  Wonderful for a party or as a little treat for mum 🙂   Makes about 20 biscuits for each recipe.
