

Mango Herby Chicken Burger……. With A Few H.K. Twists……As Joe Says, “Stay Of The Sad Step”……..

A true treasure of a recipe from the body coach Joe Wicks.....So simple and so delicious..... Sweet mango with a chilli kick, herby chicken burger, served today in a toasted brioche bun, filled to the gunnels with baby gem, tomato, cucumber ribbons, red onion, greek. style yogurt, sliced mango, crumbled with beautiful feta and a side of paprika spiced sweet potato chips.... epic and perfect for a quick, nutritiously packed Saturday night supper.........

Ingredients
THE BURGER
360 g Skinless chicken breast fillets organic, rough chopped
1 Thumb sized chunk ginger, peeled & grated
2 Plump garlic cloves, peeled & crushed
2 Red chilli, seeds removed and rough chopped
1 Handfull of fresh corriander & stalks, rough chopped
1 Handfull fresh picked mint leaves
1 Lime, woken up zested & juiced
1 Handfull of breadcrumbs, seasoned with sea salt & milled black pepper
SWEET POTATO FRIES
2 Large sweet potatoes, peeled & cut into chips
TO SERVE
large briche buns, split & toasted
2 tbsp Greek style zero yogurt
1 Mango, peeled and thinley sliced
1 Red onion, peeled & thinly sliced
Directions
Place the diced chicken, ginger, garlic, chilli, coriander, mint, lemon juice & zest, seasoned breadcrumbs into a food processor, whizz up until well blended, shape into 2 large patty.
To make the sweet potato chips, preheat the oven to 200C - 180C fan, toss the chips in coconut oil, season with sweet smokey paprika & sea salt, roast on a tray in the oven for 10-12 mins until soft & lightly browned.
Place the burgers under a hot grill, 5-6 minutes each side or until cooked through and golden.
To serve, lay on the toasted bun base, a dollop of yogurt, baby lettuce leaves, sliced tomato and red onion, ribbons of cucumber, lay on the cooked burger, scatter with crumbled feta, slithers of juicy mango, optional scattering of red chilli, top with the toasted bun top, serve with the paprika spiced sweet potato chips.......
Nice served with a delicious sweet mango, leaves and more crumbled feta salad......
