If you love chocolate, this cake will take your experience to a whole new level. It's simple to make and a total joy to celebrate a birthday with.
Pre heat your oven to 180c. Butter and line 2 x 20 cm round sandwich tins with removable bases, or 'in the modern world' use 2 x 20 cm round silicone cake trays. Place all the cake ingredients, flour, sugar, baking powder, bicarb, cocoa, butter, essence, sour cream into a food processor and mix to a creamy thick batter. Divide equally between the tins and bake for 35 mins, switching the tins around 1/2 way through. It's worth checking after 25 mins with a skewer, insert into the cakes and you are looking for a clean skewer. Remove the cakes from the oven and leave them in the tins onto a cooling rack.
Don't worry about the cracks, it all adds to their uniqueness and they are going to be covered in our delicious fudge icing.
To make the icing - melt the butter and chocolate in a bowl over gently simmering water until melted. In a separate bowl sift the icing sugar, add the golden syrup, the essence and finally the sour cream and combine. Add the icing sugar and mix to a glossy soft texture.
Once the cakes are cooled, place one on cake stand or plate, smother with 1/3rd of the fudge mixture, place the other cake on top, now with the remaining chocolate mixture cover the cake, decorate beautiful and wait for the magic moment to share with the lucky recipient.
