Raspberry & Lemon Chia Dessert… By Lucy Simmons

A great and truly simple dessert, packed with flavour and texture, for me it resembled a raspberry rice pudding with a hint of lemon. Celia was reminded of her school days and tapioca puddings, I had no idea really what she was remembering, and Simon could just not get enough of them, he must have loved his school tapioca puds 🙂

  • Prep: 5 mins
  • Yields: 4 Medium


1 cup Greek yoghurt

1 cup Full-fat coconut milk

1 tbsp Lemon zest

2 tsp lemon juice

1 cup raspberries

1 1/2 tbsp Honey

1/4 cup Chia seeds


1.  It just could not be simpler.......In a large bowl gently mix together all the ingredients leaving some raspberries to serve.  Cover and place in the fridge for 8 hours or overnight.

Spoon into pretty glasses, topped with fresh raspberries and fine zest of lemon, dust with icing sugar and serve........
