Crispy outside & succulent inside ..... SIMON'S FRIED CHICKEN ...... now here's a Bargain Bucket and Family Feast

Directions
OK HERE GOES....
Step 1: Preheat your oven to 200 degrees and your deep fryer to 180 degrees.
Step 2: Marinate your chicken pieces in a large plastic bag- massaging in the spices. Put them to one side at room temperature for 30 minutes. Then prepare the rest of the feast while they soak up the rum.
Step 3: Beans- in a large pan bring together all the beany ingredients ready to warm up.
Step 4: Fries- cut up the potatoes into wedge shapes (leaving the skin on). Coat and season with cajun rub. Get involved with your hands and massage the spices right in. Place in a large baking tray ready to roast.
Step 5: Slaw- add all the slaw ingredients together and place in a funky bowl ready to serve.
Step 6: Mix flour and seasoning together in a large bowl.
Step 7: Take the chicken, drain off excess marinade and coat the chicken with the seasoned flour, shake of any excess.
Step 8: In small batches deep fry the chicken for approximately 10-12 minutes- turning occasionally until the chicken is cooked through golden and crispy. After the chicken is cooked place on kitchen towel to drain. At the same time place the spicy fries in the oven, tossing occasionally. Gently heat up the beans.
Step 9: Serve the chicken in a clean "bucket looking thing"- the fries in greaseproof paper bags and a dollop beans and slaw by the side.......
