Shortbread, festive baking fun for all the family, rich buttery and simple to make, one just isn't enough.......

  • Yields: 30 Snack size


225 Grams Plain flour

100 Grams Semolina

225 Grams Butter

100 Grams Golden caster sugar

25 Grams Demerara sugar


1.  Pre-heat the oven 160°C/Fan 140°C/gas 3.  Lightly grease a 30 X 23cm roasting tin.

2.  In a large bowl or a food processor add the plain flour and semolina and mix  to combine.  Rub in the butter and sugar until it forms breadcrumbs and starts to come together to form a dough.

3.  Bring the mixture together and place in the tin.  Press down the dough and make it smooth and level with either a palette knife or spatular, prick with a fork.

4.  Place in the oven to bake for 30-35 minutes or until the mixture is slightly turing golden.  Take it out the oven, sprinkle with sugar.  Leave to slightly cool and cut into 30 fingers.  Enjoy.
