Simon’s Fruit & Almond Soda Cake/Bread……….

Beautiful soda cake, today packed with fruit and a handful or two of sweet ground almonds, give it a go its quick, simple and totes delicious served warm from the oven........Slathered today with smashed raspberries.

500 Grams Plain flour

100 Grams Ground almonds

1 Scattering Bicarb of soda

1 Pinch Salt

200 Grams Mixed Fruit

1 Dash Yakon syrup

500 ml buttermilk

1 Chunk Butter


Preheat oven to 170c, liberally grease a large baking tray, now for the fun.........

Sift together al the dry ingredients & fruit and like a early morning baker mix lightly with your hands, add yukon syrup and buttermilk to the mix and bring it together, once formed turn out onto a lightly floured surface, not to dry, not to sticky.  Make 4 smaller or one large cake by spooning onto the greased tray, pop into the oven for around 30 minutes until golden and a tap with your knuckle underneath the cake/loaf greets you with a nice hollow sound.
