Spain Simply In A Dish,

A truly authentic taste explosion of Spain. Paprika roasted cod laying on a bed of spicy chorizo, tomato, potato, onion and garlic. A simple one pan dish, served in the traditional way with a crusty white bread ...........Hola !!!!!!!

2-3 Plump garlic bulbs

4 Handful Baby potatoes

1 Splash Spanish olive oil

1 Spanish onion

1 Chorizo

1 Plum tomatoes in juice

2 Red chillies

Sea salt and freshly milled black pepper

4 Cod fillets

1 tsp Smoked paprika

1 Scattering Fresh Parsley

1 Crusty white bread


For a truly authentic taste, use a large earthenware ovenproof dish, the bigger the better !

Preheat your oven to 180c.  Into the dish, splash spanish olive oil, chopped potatoes, sliced onions, garlic bulbs with their heads severed, sliced chillies,  sprinkle with smoked paprika and season well.  Give it a toss together and place in the oven for 30 minutes, next add the tomatoes, chorizo, puree and a splash of water, combine well. back into the oven for 15 minutes.  Layer the oiled and seasoned cod fillets on top of the dish, roasting for a further 15 minutes until cooked and the dish is golden and bubbling, sprinkle with chopped parsley, straight to the table, serving with warm crusty bread to mop up all the beautiful juices, perfect for sharing with family and friends on a warm sunny eve, a true taste explosion of Spain.......
