“Spice Up You Life” “Left or Right”…..Indian Inspired Spicy Tomato & Coconut Soup…….

OMG.... A totally epic recipe inspired by our recent visit to an authentic Indian restaurant, "We turned left".... roasted tomatoes, ginger, garlic & shallots.... Married with a warm awoken mix of fragrant spices, blitzed to a smooth texture adding creamy coconut milk... Its rather simple to create, packed full of tongue dancing flavours, aromatic, super healthy and a real joy to share...

  • Yields: 6 large servins.....


Roasting First

12-16 Large Juicy Ripe Tomatoes....Halved

1 Large Hunk Of Fresh Ginger........ Peeled & Rough Chopped

2 Heads Of Garlic...... Peeled & Bashed ... Or. 4-6 Tbsp Garlic Puree

12 Shallots..... Peeled & Halved

Coconut oil & Coarse Sea Salt.

Waking Up The Spices.....

2 tbsp Ghee... Clarified Butter

2 tsp Garam Massalla

2 tsp Turmeric

2 tsp Corriander Leaf Ground

2 tsp Cumin

2 tsp Fennell Seeds

8 Dried Curry Leaves

1 tsp Red Chilli Powder

1 tsp Coarse Ground Black Pepper

6 tbsp Tomato Puree.

1 Fresh Corriander Plant, Reserving A Handfull Of Leaves To Serve.

400 ml Coconut Milk


Oven on 180c... Fill a roasting dish with a scoop of coconut oil, halved tomatoes, cubed ginger, bashed garlic, halved shallots give in a good mix up and scatter with sea salt.. Roast for about 30-40 minutes until caramelised and tender....

In a Large lidded pan, over a moderate heat, toast the spices in the ghee to wake them up, smell the wonderful deep aromas filling the air around you, make a rich dark paste, 2-3 minutes.... Add fresh corriander including the delicious stalks and the tomato puree.

Add the oven roasted deliciouness into the spices pan, gently simmering, blip, blip,blip for 1 to 2 hours with a lid on.

Cool Slightly and blitz the tomato spiced mix, pass through a fine sieve into a clean pan, pushing as much through as possible. Add coconut milk, heating gently, taste and adjust seasoning to your tasty buds and serve with a scattering of freshly picked coriander leaves....
