Spiced apple hidden under a hazelnut, honey & oat crumble blanket........ Delicious, smiley food to share......

6 Cooking apples

1 Orange, zest and juice

3 tbsp Demerara sugar

1-2 tsp Mixed spice

300 Grams Porridge oats

200 Grams Plain flour

200 Grams Chilled butter, cubed

4 tbsp Clear honey

200 Grams Soft light brown sugar

100 Grams Crushed hazelnuts


1.  In a large saucepan add the peeled cored & chopped apples, orange zest & juice and mixed spice.  Add water to the pan just covering the apples.  Bring to the boil and cook for 5 minutes or until the apples are soft.  Drain away the water leaving 100 ml of the cooking liquid with the apples and pour into the base of the overproof dish.

2.  In a bowl rub together the oats, flour and butter until it forms breadcrumbs, add the honey, sugar and lightly smashed hazelnuts and rub together again until it forms small clumps, like gravel.  Scatter the oat mixture over the apples and place in the oven for 45 minutes until the top is golden and bubbling and the nuts are toasted deep brown.  Serve while hot with custard or cream......  Enjoy.
