

Spiced Coffee Flan

If you like coffee, you will love this recipe, one slice just isn't enough !!!!

Directions
For the Caramel
- 125g Sugar
- 2 tbsp Hot Water
Warm a baking dish (15-18cm) gently in the oven. Now first make the caramel. Melt the Sugar in a heavy, bottomed pan, stirring occasionally, until it turns golden brown. Remove from heat and slowly stir in the Hot Water. Immediately pour into your warmed dish and tilt and rotate the caramel to completely coat the bottom of the dish. Set aside to cool.
Scald both the Milk and Condensed Milk together in a heavy bottomed saucepan. Remove from heat and add Sugar, Coffee Powder, Vanilla and Cinnamon, stirring until all infused. Lightly beat the Eggs plus the extra Yolks and stir in the spiced milk, followed by the Kuhula.
Gently strain the mixture into the caramel lined dish. Place in a roasting tray and pour in (to the roasting dish!) enough hot water to come about ½ way up the sides of the dish. Bake in a pre-heated oven 50-60mins. It is set when a table knife inserted in the centre comes out clean. Remove, cool down, then chill well. To serve, release the sides of the flan from the dish gently with a palette knife and place your serving plate over the chilled flan and flip upside down, giving a little shake………beautiful, sticky and delicious!
