Mix together all the sauce ingredients into a thick sticky sauce, season and adjust to taste (my encouragement is to play with the quantities, taste and adjust!!). Smother over your Rack both sides and marinate 4-6 hours or overnight in your fridge
For the Sweet Potatoes
8 Large Sweet Potatoes – washed
6 Large Apples – randomly chopped
Pre-heat oven to 130C. In a large tray throw half the apples with a splash of Olive Oil. Place the marinated Ribs onto and roast gently for 6 hours, turning a few times.
With 2 hours to go, place the Sweet Potatoes in the oven too ??????? and scatter the remaining apples in the Rib tray.
With 1 hour to go whack you oven up to 200C to really get the Ribs moving, crisping the potato skin and apple as well!
For the Zingy, Spicy Slaw
Half a White Cabbage
6 Carrots – peeled
2 Large Chillis – seeded
1 Large Red Onion
6 tbsp Mayonaise
Shred everything (except the Mayo) in a food processor and then mix in the Mayo.
Crack the beers open and serve on a big wooden board with warm lemon water (to wash your hands cause this is going to get messy) ……Devour!!!
Now boys, for fun and if you’ve got a place to do this, build a fire and just to the side roast the ribs and sweet potatoes for the last hour by the fire…….and for more fun devour the sticky loveliness by the fire aswell!

Go for this……It’s a late spring evening. Light a nice fire, Chimnea etc. Get some blankets, cushions, loads of candles and delicious, cold beer or wine…..watching the sunset together….Beautiful!
