

THE FARMERS MARKET- beer can chicken with roasted veg & caramelised apples

So on our visit to the locals farmers market we sourced all the following ingredients to create an amazing cider can chicken with roasted root vegetable and caramelised apples and a sticky rhubarb and ginger cake!

Directions
Simply randomly chop the above ingredients, place in a large roasting tray, drizzle in rapeseed oil, season with salt and pepper and some fresh garden herbs. Tune into what you have available and what you think will be a good marriage! In this recipe we used fresh thyme and the odd looking root vegetable is scorzonera. Roast the vegetables for around 1 hour, plan this to time perfectly with your roasting chicken !
FOR THE CHICKEN
In a small oven tray (so the chicken is snug!), open your can and take a little gulp, to test and pour a third of it in the tray then place the apples in. Place the wrapped can inside the chicken's " jacksey !" Make sure the top of the can is uncovered allowing the steamy beer to penetrate the bird from within. Oil the bird and season with salt and pepper, Roast the chicken stood upright (see the picture) to butcher's instructions.
Serve with more beer or cider.
Tip: also excellent done on the BBQ for a truly moist and flavoursome bird to share with friends and family!
