Vibrant red cranberry sauce, so simple to make and store ahead, perfect for Christmas day lunch.

  • Cook: 10 mins
  • Yields: 10 Generous

350 Grams Fresh cranberries

200 Grams Caster sugar

50 ml Ruby port

60 ml Water

1 Orange

Place everything in a pan over a moderate heat and let it all bubble away merrily, the vibrant red berries will start to pop, keep stirring with a wooden spoon giving the berries a gentle crush for about 10 minutes.  Check for sweetness adding a little more sugar if needed.  Cool and refrigerate until needed.

It's worth mentioning that the sauce may look a little runny after cooking, but as the fruit cools it will thicken immensely from the pectin-rich fruit.

Remove from the fridge a hour before serving, give it a good stir through and serve in a groovy festive bowl.
