White chocolate and raspberry brioche pudding …. by Lucy

A fun, easy and quick pudding that everyone will love! A wonderful white chocolate and raspberry dessert!

  • Yields: 8-10


1 Large Brioche loaf

450 Grams Raspberries

2 Large White chocolate buttons

3 Medium Eggs

1 tsp Vanilla extract

500 ml Double cream

75 ml Creme fraiche


Butter a baking dish and spread a layer of brioche cubes and 2/3 of the raspberries on the bottom followed by 2/3 of the white chocolate buttons.

Top with another layer of brioche then tuck the remaining raspberries and buttons into the top of the pudding.

In large jug, mix the eggs, cream, crème fraîche and vanilla essence to make a custard and pour on top of the layers of brioche.

Bake at 200°C (gas mark 6) for 20-25 minutes then remove and allow to stand before sprinkling with some icing sugar and serving.
