Winter Night Blueberry Sponge Pudding…..

For me this is something quite special. When spooning into a rich syrupy, fruity steamed to perfection pudding, it brings such happy memories of family mealtimes, lazy Sundays and that feeling of satisfaction. So here is one of my favourites, adorned with blueberries and served with loads of ice cold double cream...... Happy days 🙂

  • Yields: 6 Generous


175 Grams Butter Unsalted

150 Grams Golden syrup

200 Grams Blueberries

175 Grams Golden caster sugar

3 Medium Eggs

175 Grams Self raising flour

1 tsp Baking powder

Pinch Salt

Splash Double cream


So you will need a 2 pint pudding basin well greased with butter and a large pan of water on the boil, with a steamer basket and lid.

Pour the golden syrup into the buttered pudding basin and add the blueberries.

Whisk together all the remaining pudding ingredients until combined and light and fluffy, carefully spoon into the basin.  Cover the top with a square of baking parchment.  Wrap 2 layers of foil around the whole basin to form a tight seal.  Lower into the steamer basket, reduce heat to a rolling simmer and steam for 1 1/2- 2hours.

Turn out the pudding onto a warmed serving platter and serve straight to your table with a jug of ice cold cream or warm custard.
