Winter Swede & Thyme Squash…..

A simple and delicious accompaniment for your Christmas feast, make in advance ready for the big day. Beautiful steamed Winter swede, roasted butternut squash & thyme, pureed with cream and a hint of nutmeg. We love the deep earthy flavours and vibrant orange yellow colours.

2 Large Winter swede

1 Large Butternut squash

Scattering Sea salt & freshly milled black pepper

1 Handful Freshly picked thyme

Splash Olive oil

1 Small handful Butter

1 Dash Single cream

Pinch Freshly grated nutmeg


Slice the butternut squash in half, remove any seeds, score with a sharp knife, drizzle with oil, season adding a few sprigs of fresh thyme and roast in a moderate oven at 180c until tender. Prepare the swede, giving it a quick peel and cutting into random cubes, place in a steamer over boiling water, season and add a sprig or two of fresh thyme.  Steaming until tender.

Place the  steamed swede into a large pan, scoop the caramilsed flesh from the squash adding that too with all the roasted thyme, add a generous chunk of butter and mash to a smooth consistency, you could, if you prefer a smoother dish, gently puree.

To serve, reheat the mash over a gentle heat, adding cream and a dusting of freshly grated nutmeg and combine well.  Check the seasoning to your taste buds, serve in a warmed serving dish with a drizzle of extra virgin oil, a swig of cream and a little more nutmeg.
