As it was pancake day this week I decided to share how I made mine!! Which is a twist to the normal sweet pancakes and you can decorate it how you want!! Although I still love the traditional dusting of sweet sugar drenched in lemon, the choice is really endless, fresh fruit, honey, fruit jams, chocolate...oh and I love chocolate, chocolate with crushed nuts, oh I must stop.... my mouth is watering so much. So kids enjoy pancakes and go crazy with your own mouth watering toppings..... Yay for pancake day !

In a large bowl sift together the plain flour and a pinch of salt. After sifting make a well in the centre of the flour and break the eggs into the well. Then start to whisk the eggs into the flour mixture, combine it all together.
In a jug measure out the liquid ingredients and slowly beat into the large bowl, make sure there is no more flour left around the side.
Get a pancake pan and melt 20z of butter, wait until the pan has got really hot then you can add your mixture about 3tbsp full. Turn the pan down to a medium heat while cooking the pancakes. You can lift the edge of the pancake with a palette knife to see if it has cooked. When it has reached a light golden colour it's ready to flip, (the other side won't take as long). Then slide onto a plate.
For the topping
In a bowl whisk the cream until it reaches a firm peak. Place into a pipping bag with a star tip nozzle and you can make your own pattern around the pancake. Cut up the strawberries and place onto the pancake with the blueberries. In another bowl melt the chocolate in the microwave for 1 minute and an extra 30 seconds if not all of it has melted and then drizzle over the pancake.
Now ready to eat!!
